Otherwise we advise you opt for a reliable and delicious staple like Guatemala or our seasonal Mexico which both have nearly identical medium roast profiles. We don’t want to scare you but this is an amazing coffee only for people who go for a fruity and ferment-y coffee.

We roast it super light yet manage to avoid the underdeveloped notes when treading in these dangerous waters. The secret is a precise controlled last few minutes of the roast. If we come in with too much momentum, it’s game over. But we turn off the podcasts, set the phone on Do Not Disturb, get centered and really bring it home.

Brew recipes & musings: This coffee is sensitive to brew tweaks. With a 5 point shift from 40 to 35 on a calibrated Niche grinder, body and sweetness returned robustly. A rather minor adjustment. The recipe is 310G water to 21G coffee at 95C. A~50g 45 second bloom followed by two even pours of 130G each. Total brew time 2:40. One wild note is that the coffee has all the notes described above but when paired with a subtle beautiful cinnamon roll from Bella’s Italian Bakery and Market, the predominant flavor is DESERT SAGE. How does this alchemy happen? It’s a really really fun coffee.
