The second release of Trillium is an extended fermentation process Grade ONE Yirgacheffe. Roasted light, the beans are small, uniform and quite pretty. But how does it taste? As a pour-over: A lingering pleasure awaits with ripe sweet apricot up front and a sweet date finish. There’s a sophisticated dryness to the flavors. It’s sweet with just the exact right amount of sweetness, like dried tangerine slices. While it has some brightness, it’s a balanced acidity.
Pulled a nice espresso but I was too busy enjoying it to write down flavor notes.

new coffee drop: November 2026
We have very small lots of some beautiful coffees that we have been aging as an experiment. We will be rotating through a number of special process Ethiopian coffees that have been aging here in sealed bags since 2024.
#1 Cherry-CoFerment - SOLD OUT
#2 extended fermentation washed Yirgacheffe - available now
roasted lighter than Trillium #1 as it shines best with higher initial heat and then a gentle coast up to its final temperature, a solid 10 degrees lighter.
The TRILLIUM coffee designation/label will be where we rotate a bunch of exciting offerings. CHECK BACK OFTEN!
The only ingredient in our coffee is coffee. Always and forever. We add nothing and the flavor notes are just the magic already in the bean that we tease out through meticulous roasting.
